The MacBook Pro M1 supports (without tricks) only one external monitor. You can use your existing Thunderbolt dock für the first one.
You may use a small DisplayLink adapter (
e.g. https://www.amazon.com/-/de/dp/B00OD37KHG/ ) on one of the USB ports of the dock to connect the second monitor.
Drawback is, that you need to install an addtional DisplayLink driver. With this driver running you have limitations on DRM protected content, no HDR, no pivot and no electronic control of brightness etc…
But for normal office use DisplayLink is fine.
