After spending some time on discord, and reddit I've found a halfway solution that works. I currently have my laptop plugged into the D6000 dock, with DP1 and DP2 both going to DP1 and DP2 on the monitor, and I have PBP enabled, with DP1 on the left and DP2 on the right, with 2560x1440 resolution set to both, this gives me full resolution, over two emulated monitors.
However the right monitor has a blue tint to it, apparently this can be somewhat fixed with AOC's G-Menu program, however I was unable to get this program working:

I also found this reddit thread where /u/supermanwah15 achieved the full resolution on his MacBook using a USB-C to DP1.4 adapter, I have bought one of these adapters, and will update the thread when it arrives, I have a few devices I will test with as well.
